This week hasn’t felt much like spring, but today the sun is finally shining, the birds are chirping, and I can hear the six inches of snow we received over the past two days quickly melting away (hopefully for good). What a classic April Fool’s joke!

Despite our unpredictable Midwestern weather, spring is officially here, and Easter is just around the corner. If you’re looking for ideas for your Easter brunch, I’ve created a collection of three spring-inspired menus that are perfect for the holiday or any spring occasion.
Each menu features a vibrant display of color, flavor, and springtime flair, with dishes chosen to complement each other. Each menu includes a main course, salad, breakfast pastry, and dessert. You can complement the menus with your favorite breakfast sides, such as bacon, sausage, and potatoes, or mix and match between the menus.

A Classic and Colorful Spring Brunch
This collection features classic brunch favorites such as quiche, big-batch salads, muffins, and dessert bars. The menu includes some of my all-time favorites, including my big-batch Rainbow Layer Salad with Buttermilk Herb Dressing. I could eat this salad from spring through summer and never get tired of it. My quiche Lorraine is easy to make, but you could also serve my Classic Ham Quiche, a favorite for Easter and a current feature on my SarahBakes Easter Spring Menu.

A Feast of Spring Flavors
This collection features bright and vibrant spring flavors, including old-fashioned favorites like egg strata (egg bake), strawberry bread, coconut cream pie, and one of my newest salad recipes. I love how each dish complements the others; the rich and cheesy strata is perfectly balanced by the tangy citrus punch in the salad. The strawberry bread (also available on my SarahBakes Easter Menu) is light enough that you can enjoy a second slice and still have room for a piece of my decadent coconut cream pie.
